Lemon Garlic Shrimp with Veggies
Ingredients
- 1.5 lbs shrimp peeled and de-veined
- 2 bell peppers sliced into strips
- 2 cups broccoli separated into florets
- 1 lemon zest and juice
- 6 cloves garlic minced
- 1 bunch parsley minced
- 4 tbsp butter
- 2 tsp Italian herbs
- ½ tsp red pepper flakes
- ¼ cup white wine
- Cooked rice optional
Instructions
- First, steam the broccoli with 2 cloves minced garlic until tender, about 5 minutes.
- In a skillet, saute bell peppers with olive oil and 2 cloves minced garlic. Set aside when starting to become crispy.
- In the same skillet, saute shrimp with some olive oil, the remaining garlic, red pepper flakes, and Italian herbs until pink and no longer translucent.
- Remove shrimp from the skillet. Add white wine to deglaze the skillet and let reduce by about half before adding the butter and lemon zest/juice. Add the shrimp, broccoli, and bell peppers back into the skillet and toss to combine with the sauce.
- Top with parsley and freshly cracked pepper before serving with optional rice.
