Moroccan Chicken Tagine with Olives & Raisins
Ingredients
- 3 chicken breasts cut into 1-inch cubes
- 1 onion sliced
- 5 cloves garlic minced
- 1 tsp turmeric
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- ½ tsp cumin
- ½ tsp salt
- 1 cinnamon stick
- ¼ cup golden raisins
- 1 bell pepper chopped
- 1/4 cup pitted green onions halved
- ½ Meyer lemon cut into thin slices (keep the rind attached)
- 2 tbsp honey
- 1/2 cup chicken stock
- 1 bunch cilantro chopped
Instructions
- Slowly heat the tagine to medium-high heat with some olive oil. Place chicken pieces in tagine and cook, uncovered, until chicken is browned. Add onion, bell pepper, garlic, salt/pepper, cayenne pepper, turmeric, and cumin. Cook for another 5 minutes.
- Add the lemon slices, raisins, green olives, honey, cinnamon stick, and then chicken stock. Stir to mix. Cover tagine with the top, set heat to low-medium, and cook, covered, for 30-40 minutes and chicken is cooked through and tender. Sprinkle over chopped cilantro. Can serve with rice pilaf or couscous.
