Oatmeal Chocolate Chip Sweet Potato Cookies
Ingredients
- 2 sweet potatoes
- 2 cups oats
- 2 cups all-purpose flour
- 1.5 cups chocolate chips
- ½ cup brown sugar
- ¼ cup white sugar
- ¼ cup honey
- ½ tsp salt
- 1 stick butter unsalted
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ground ginger
- ½ tsp nutmeg
- ½ tsp cloves
Instructions
- First, peel sweet potatoes, roughly chop into cubes, and boil on stove for about 15 minutes or until tender. Remove sweet potato chunks, mash, and set aside.
- Preheat oven to 350 degrees.
- In one bowl, mix together the butter, white/brown sugar, honey, egg, and vanilla extract. In another bowl, combine the flour, oats, salt, and spices.
- Combine wet ingredients (including mashed sweet potato) with dry ingredients in your largest bowl and fold in chocolate chips.
- On a parchment paper-lined baking sheet, scoop equally-sized dollops of dough (we used an ice cream scoop to make them even) and bake for about 12 minutes.
