One-Pot Fish Vindaloo Curry

This is a shortcut method to make vindaloo, a savory and delicious Indian curry.

Ingredients

  

  • 1 lb cod or other fish
  • 2 bell peppers diced
  • 1 sweet onion diced
  • 1 package cremini mushrooms sliced
  • 1 container vindaloo curry sauce

Instructions

 

  • Roughly chop fish into 2-inch pieces. Marinate the fish in half of the vindaloo sauce for a few hours.
  • Saute bell peppers on medium heat for 5-10 minutes and set aside. In the same pan, saute onions and mushrooms until starting to become golden. Add the other half of the vindaloo sauce and simmer for 5 minutes.
  • Add fish and let simmer for about 15-20 minutes and fish is cooked through. Serve warm with rice or naan.

Notes

While this isn’t the most authentic method to making vindaloo, it’s great when you’re in a time crunch for a simple meal prep.

FYI the vindaloo sauce we used was Maya Kaimal simmer sauce. We got ours at Costco but you can find other equivalent sauces here on Amazon.
