How to make this Breakfast Hash recipe
This recipe is quick, simple, healthy, and above everything is delicious!
It uses only one pot to make (very easy cleanup). You basically just cook each component in the pan and then at the end, combine them all into one dish.
The creaminess of the goat cheese pairs really well with the savory-ness from the sausage and the spiciness from the Fresno pepper. And the charred veggies and fresh cilantro give it a healthy kick.

One Pot Healthy Breakfast Hash
Ingredients
- 4 medium yellow potatoes cut into small cubes
- 1 red bell pepper diced
- 1 large zucchini diced
- 1 large onion diced
- 1 fresno pepper sliced
- 3 cloves garlic
- 3 sausages halved and sliced
- 8 oz plain goat cheese
- 1 bunch cilantro
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a cast iron skillet on medium heat, first cook the sausage until cooked through and crispy, about 8 minutes. Set aside.
- In the same skillet, saute the potatoes until cooked through and crispy, about 8 minutes. Set aside.
- Next, saute the onions, fresno pepper, and zucchini for about 5 minutes. Add the garlic, cumin, and paprika and saute for another 3 minutes. Season with salt and pepper, to taste.
- Now, combine the sausage and potatoes with the onions and zucchini and saute together for 3 more minutes.
- Finally, serve in a bowl, sprinkled with goat cheese and cilantro. Serve warm.
