Thai Peanut Noodles with Shrimp
Ingredients
- 1 packages rice noodles
- 1 lb shrimp peeled and deveined
- ½ tsp garlic salt
- ¼ can coconut milk
- 4 tbsp peanut butter creamy or crunchy
- 2 tbsp soy sauce
- ½ lime juiced
- 1 bunch green onions sliced diagonally
- 1 Fresno pepper sliced diagonally and deseeded
- ½ tsp sesame seeds
Instructions
- First, cook rice noodles according to package instructions. Saute shrimp with garlic salt and some oil on medium heat for a few minutes until no longer translucent.
- In a small bowl, whisk the coconut milk, peanut butter, soy sauce, and lime juice until combined.
- In a large bowl, toss the noodles and shrimp with peanut sauce. Top with green onions, sesame seeds, and sliced pepper.
- Serve warm.
