Turkey, Beef, & Roasted Kale Tacos
Ingredients
- 15 small tortillas
- 1 lb ground beef
- 1 lb ground turkey
- 1 large bag kale
- 1 red onion sliced
- 2 bell peppers diced
- 2 avocados cubed and tossed with lime
- 1 bunch cilantro chopped
- 3 limes
- 4 cloves garlic minced
- 2 tsp paprika
- 3 tsp cumin
- 2 tsp dried oregano
- 2 tsp chili powder
- Salt/pepper to taste
- Salsa
Instructions
- Preheat oven to 425 degrees and roast kale for ~25 minutes or until crispy, turning once halfway through cooking.
- Meanwhile, in a large skillet on medium-high heat, start cooking the turkey and beef. Once most of the liquid has evaporated, add all of the spices listed and continue cooking for another few minutes.
- Set the meat aside and in the same skillet, saute the onion, bell pepper, and garlic in olive oil with salt/pepper until golden.
- Toast the tortillas either in a toaster oven or broiler until crispy.
- Now it’s time to assemble the tacos. Lay out a tortilla and place some kale, then meat, then sauteed veggies, then avocado, and finally, top with cilantro and lime. Serve with salsa.
