Zesty Lime-Cooked Shrimp Ceviche
Ingredients
- 1 lb raw shrimp
- 2 Roma tomatoes chopped
- ½ large red onion diced
- 10 limes juiced
- 1 jalapeño pepper minced
- 1 avocado cubed
- 1 tsp cumin
- ½ tsp sea salt
- 1 tsp black pepper
- 1 bunch cilantro chopped
- Tortilla chips or tostadas
Instructions
- Start by peeling and deveining the shrimp, removing tails and cutting each shrimp into about 4-6 pieces. In a bowl, combine the shrimp and lime juice, making sure the shrimp are all submerged. Let rest for at least 1.5 hours.
- Meanwhile in another bowl, combine the tomatoes, onion, jalapeño pepper, cilantro, cumin, and salt/pepper. After the shrimp has turned completely from gray to pink, pour the shrimp/lime into the other bowl, add avocado, and gently mix to combine.
- Serve chilled or room temperature with chips or tostadas.
