Ingredients

  

  • 4 eggs
  • cup granulated sugar
  • 250 g semisweet chocolate bar
  • ¼ cup cocoa powder sifted
  • 250 ml heavy cream
  • Berries and mint for garnish
  • sifted powdered sugar for dusting

Instructions

 

  • Note: this recipe is best when using a springform pan, like the one listed below.
  • Grease springform pan with butter, add a circular piece of wax paper to the bottom, grease the top of that with butter, and set aside. Preheat oven to 300 degrees. Bring the heavy cream to a small boil on medium heat in a pan. Meanwhile, break apart chocolate bar into small pieces and place in a large bowl. When heavy cream is ready, pour it into the bowl with chocolate. Mix until it melts.
  • Meanwhile, in another large bowl, add sugar and eggs and beat with an electric beater for ~3-5 min or until soft peaks.
  • Slowly fold the eggs into the chocolate followed by the cocoa powder, stirring gently with the spatula, until combined. Pour into the springform pan and wrap the bottom of the pan with some aluminum foil (so water doesn’t get in).
  • Fill a large pan or pie dish (anything that the springform pan will fit intand fill it with hot water. Place the springform pan inside of this, making sure the foil prevents water from getting into the pan. Bake in oven for 1hr or until a toothpick comes out almost clean.
  • Let cool at room temp and then store in fridge for a few hours before dusting with a bit more sifted cocoa powder, powdered sugar. Top with berries.
