Glazed Chocolate Chip Pumpkin Walnut Bread
Ingredients
Bread
- 3.5 cups all-purpose flour
- 2 cups pumpkin puree
- ½ cup walnuts roughly chopped
- ½ cup chocolate chips
- 1 cup vegetable oil
- 2/3 cup water
- 4 eggs
- 2 cups sugar
- 1 tsp baking powder
- 2 tsp baking soda
- 2 tsp salt
- 1 tsp nutmeg
- 1 tsp allspice
- 1 tsp cinnamon
- ½ tsp cloves
Glaze
- 1.5 cups confectioner’s sugar sifted
- 1 tsp vanilla extract
- 3-4 tbsp milk
Instructions
- Preheat oven to 350 degrees. In a large bowl, mix together the flour, baking powder, baking soda, salt, nutmeg, allspice, cinnamon. In another bowl, use a mixer to mix together the sugar, eggs, oil, and pumpkin puree. Slowly add in the mixed dry ingredients while mixing. Slowly add water while mixing. Switch to mixing with a spatula rather than a mixer and add walnuts and chocolate chips.
- Pour into two greased loaf pans and bake in oven for 90 minutes or until a toothpick comes out clean from the center. Let cool completely to room temperature. Meanwhile prepare glaze by adding sifted confectioner’s sugar to a bowl and slowly stir in the vanilla and milk until desired consistency. Drizzle the glaze over the cooled bread with a spoon and place in refrigerator. Can serve once glaze has hardened.
