A healthy interesting twist on BBQ pork sliders

Ingredients
  

Sliders

  • 1 jackfruit flesh isolated
  • 1 large onion sliced
  • 6 garlic cloves minced
  • 2 cups BBQ sauce
  • 3 tsp smoked paprika
  • 3 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp cayenne pepper
  • 1 cup vegetable or chicken stock
  • 24 Hawaiian rolls

Coleslaw

  • 1 bag coleslaw mix
  • 1/2 cup mayonnaise
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • 3 tsp mustard
  • 1 tsp black pepper
  • 1 tsp salt

Instructions
 

  • Preheat oven to 425 degrees. Sauté onions for 5 minutes on medium heat. Add jackfruit (may have to use multiple pans depending on how much jackfruit you have). Combine spices and add to jackfruit. Sauté jackfruit/onions for 5 minutes, add stock, cover pan(s), and keep on medium heat for 20 minutes.
  • Remove jackfruit and use two forks to pull apart jackfruit, as if making pulled pork. Add 1 cup of the BBQ sauce to jackfruit and spread it on baking sheets lined with foil or parchment paper. Bake for 20 minutes, turning once halfway through. Add remaining 1 cup BBQ sauce and bake for 5 more minutes.
  • Make the coleslaw by combining all the sauce ingredients and then tossing with the greens.
  • Leaving Hawaiian rolls connected, slice them all in half, and toast them in the oven till crispy. Now add jackfruit mixture, top with slaw, and place top half of rolls on top. Use a spatula or knife to separate rolls and serve sliders warm.

Notes

You can substitute 4 cans of jackfruit for the whole jackfruit
