Shrimp Biryani
Ingredients
Shrimp
- 1 lb shrimp peeled and deveined
- 2 tsp garam masala
- 1 tsp turmeric
- ½ cup cashews
- 3 cloves garlic minced
- 2 tsp ginger minced
- 1 tbsp butter
- 8 oz cremini mushrooms sliced
- 2 red onions thinly sliced
- 1 bunch cilantro stems minced and leaves chopped
Rice
- 1.5 cups basmati rice
- 1 cinnamon stick
- 2 tsp turmeric
Instructions
- First, cook rice according to package instructions but add a cinnamon stick and turmeric.
- Meanwhile, saute mushrooms in a pan with oil until golden and set aside. In the same pan on medium-high heat with some oil, add garlic, ginger, onion, turmeric, garam masala, diced cilantro stems, and cashews. Saute for a few minutes and then add shrimp.
- Preheat oven to 425 degrees. Cook until shrimp are cooked through, take off the heat, add the mushrooms from before, and stir in butter. In an oven-safe bowl or pan, layer the rice with the shrimp mixture, cook in oven for about 10 minutes.
- Top with chopped cilantro leaves and serve warm.
