Ingredients

  

Shrimp

  • 1 lb shrimp peeled and deveined
  • 2 tsp garam masala
  • 1 tsp turmeric
  • ½ cup cashews
  • 3 cloves garlic minced
  • 2 tsp ginger minced
  • 1 tbsp butter
  • 8 oz cremini mushrooms sliced
  • 2 red onions thinly sliced
  • 1 bunch cilantro stems minced and leaves chopped

Rice

  • 1.5 cups basmati rice
  • 1 cinnamon stick
  • 2 tsp turmeric

Instructions

 

  • First, cook rice according to package instructions but add a cinnamon stick and turmeric.
  • Meanwhile, saute mushrooms in a pan with oil until golden and set aside. In the same pan on medium-high heat with some oil, add garlic, ginger, onion, turmeric, garam masala, diced cilantro stems, and cashews. Saute for a few minutes and then add shrimp.
  • Preheat oven to 425 degrees. Cook until shrimp are cooked through, take off the heat, add the mushrooms from before, and stir in butter. In an oven-safe bowl or pan, layer the rice with the shrimp mixture, cook in oven for about 10 minutes.
  • Top with chopped cilantro leaves and serve warm.
