Eggs Benedict with Prosciutto & Arugula
Ingredients
- 2 large egg
- 1 small can Hollandaise sauce
- 2 slices prosciutto
- ¼ cup arugula
- 1 tsp parsely
- ½ tsp smoked paprika
- 1 everything bagel
Instructions
- Toast the bagel in a toaster and reserve. Heat prosciutto in a hot pan until slightly crispy and reserve. Heat a pot 2/3 filled with water and 1 tbsp vinegar until it is simmering (just below boiling). With a large spoon, stir the water into a gentle circle. Carefully crack an egg into a small bowl and lower it into the spinning water.
- After 4 minutes, remove egg with a slotted wooden spoon and place on a paper towel to dry. Heat Hollandaise sauce in microwave until warm. Finally, construct the meal with a bagel on bottom, then prosciutto, then arugula, then the egg, then heated Hollandaise sauce. Top with parsley, salt, pepper, and a touch of paprika.
