One-Pot Fish Vindaloo Curry
Ingredients
- 1 lb cod or other fish
- 2 bell peppers diced
- 1 sweet onion diced
- 1 package cremini mushrooms sliced
- 1 container vindaloo curry sauce
Instructions
- Roughly chop fish into 2-inch pieces. Marinate the fish in half of the vindaloo sauce for a few hours.
- Saute bell peppers on medium heat for 5-10 minutes and set aside. In the same pan, saute onions and mushrooms until starting to become golden. Add the other half of the vindaloo sauce and simmer for 5 minutes.
- Add fish and let simmer for about 15-20 minutes and fish is cooked through. Serve warm with rice or naan.
Notes
FYI the vindaloo sauce we used was Maya Kaimal simmer sauce. We got ours at Costco but you can find other equivalent sauces here on Amazon.
